The quality of our EVO oil starts in our organic olive groves, where olives are grown without the use of pesticides or chemical fertilizers. The selection of olives takes place directly in the field, at the moment of perfect ripeness, when the content of polyphenols and fatty acids is at its peak.

We hand-pick the olives, a traditional method that allows us to select only the best fruits. This attention to manual selection ensures that only the most intact and healthy olives enter our EVO oil, excluding any damaged or overripe ones that could compromise the final quality of the product.

Washing: A Fundamental Step for Product Purity

After harvesting, the olives are quickly transferred to the mill to prevent any oxidation that could alter their organoleptic profile. Once they arrive, the olives undergo a rigorous washing process.

Washing the olives is an essential phase for removing any impurities on the surface of the fruits, such as dust, dirt, or plant residues. For our premium organic olives, we use pure water, without any chemical additives, ensuring that each olive is perfectly clean before being processed.
