The essential ingredient for mayonnaise is eggs, which, as you can easily guess, must be very fresh since the recipe requires them to be used raw:
- Purchase eggs labeled “extra” on the packaging, indicating they were laid within the last 9 days.
- Ensure the shell is intact and clean, with a uniform color.
- When shaking the eggs near your ear, if they are fresh, you should not feel any movement inside.
- Once cracked, the egg whites should be clear and thick, free from foreign particles, as should the yolks.
Procedure:
- Separate the yolks from the whites.
- Add salt and start beating the yolks with a medium-sized whisk.
- Gradually add the oil in a thin stream, continuing to beat vigorously (after about 6-7 minutes, the mayonnaise will start to thicken).
- Once the mayonnaise is ready (it will take approximately 15 minutes in total), add the lemon juice and serve.
